 This time I will bring to you a traditional spanish recipe, but… with a twist! We will be stuffing it as if the omelette was a sandwich. I promise it’s delicious. This homemade recipe is mouth watering and will give you a taste of the typical spanish cuisine while experimenting a little bit in the kitchen! Read how to make the stuffed Spanish omelette!


Stuffed Spanish omelette

In Spanish cuisine, the potato omelette is a must. Although this omelette is already very tasty in itself, it is great with a side dish, like a salad, some cheese…

What we are going to do is to integrate the side dish into the omelette itself. This way, the cheese will melt with the heat of the omelette and the rest of the ingredients will be like a delicious sandwich.

The good thing about this way of preparing the potato omelette is that the filling can be anything you desire! That’s what’s cool about it, it’s up to your imagination! Anything that goes well with the omelette can be used as a filling. In addition to the way I am going to prepare it now, it is also delicious with the recipe for shredded chicken that we prepared recently.

Delicious stuffed Spanish omelette

I usually make this recipe a lot for birthday parties and the guests love it. I cut it into small squares and put a toothpick in the centre to be able to pick it up. 

Ah! And the best thing is that it's very easy to prepare… So, come on, let’s go to the kitchen!

Ingredients of the Stuffed Spanish omelette

  • 1kg of potatoes
  • 6 eggs
  • 1 onion
  • 1 tomato
  • 100 grams of cheese
  • 100 grams of ham
  • Mayonnaise
  • Lettuce
  • Parsley
  • Salt

Preparation of the Stuffed Spanish omelette

Peel the onion and chop it finely.

Peel the potatoes, chop them into small squares and fry them together with the onion (do NOT fry them until they are crispy, just until they are soft).

Break the eggs into a bowl, add salt and finely chopped parsley (I didn't use it because I didn't have any, but it's much better). Beat it and once the potatoes and onion are fried, drain them and pour them into the egg and mix.

Take the frying pan in which we fried the potatoes and onion and remove the oil, leaving a few drops to prevent the omelette from sticking. Pour in the mixture.

Leave it cooking for a while and turn it over with a plate, then leave it for another while on the other side. To know it is done, prick it with a toothpick or knife and it should come out clean.

Once it is done, take it out with a plate, open it in half (as if it were a sandwich), remove the top part and spread mayonnaise on the bottom part.

Chop the tomato into thin slices and place them on top of the mayonnaise, grate the cheese and ham and sprinkle it on top of the tomato.

Place the lettuce and cover with the omelette lid. Preheat the oven to 200°C (392ºF) and place the omelette in the oven for 5 minutes so that the cheese melts.
