I like to look into the history of some of the foods I make and how they have evolved over time. Chocolate mousse originated in France, around the 17th century, when chocolate first became known. It has evolved into the chocolate mousse we know today.

Nowadays it is a very famous and tasty dessert.There are many variations of chocolate mousse, you can add liqueur or even change the type of chocolate you use!

In this case we are going to make it with dark chocolate, which gives it a special touch. Do you know what it would be delicious with? With flour pancakes or even crepes! When I make it at home it never lasts, as my family eats it all so quickly!

Ingredients of Dark chocolate mousse

  • 2 eggs
  • 100 grams of sugar
  • 500 ml of cream
  • 400 grams of dark chocolate

Preparation of Dark chocolate mousse

Separate the egg yolks from the egg whites. Add the sugar to the egg yolks and beat until they double in volume.

Whip the egg whites until stiff.

Semi-whip the cream (do not whip it completely as the mousse would become stiff).

Melt the chocolate in a bain-marie.

To the cream, add the egg yolks that have been whipped with the sugar and fold it very carefully.

To the mixture we add the egg whites while folding it all together.

Pour in the chocolate little by little, stirring continuously.

Once everything is well mixed, put the mixture into the cups or glasses you want to serve it in. Then, put it in the fridge until it is very cold.

You can decorate it as you like. I have done it with whipped cream and grated dark chocolate, but you can also use ground almonds, chocolate shavings, etc.
