 Today I am going to explain how to make shredded chicken. This recipe is ideal to accompany other dishes like inside sandwiches or fajitas. However, it can also be eaten on its own. I use it as a base for many of my dishes! In this case we are going to give it a personal touch.

Chicken is a very inexpensive and nutritionally beneficial food! I love it because there are so many chicken recipes that we can prepare very easily and without spending a lot of money. An example are my shredded chicken fajitas, which I explained step by step! I invite you all to try it out, it’s definitely worth it.

The chicken I used in that recipe is the one I will be sharing with you all today. So, let’s go to the kitchen and prepare this amazing homemade recipe.


Ingredients of the shredden chicken:

  • 1 chicken breast

  • 3 onions

  • 6-7 tomatoes

  • ½ red pepper

  • 3 garlic cloves

  • 5 tablespoons of tomato sauce

  • Vinegar

  • Salt

  • Food coloring (optional)


Preparation:

To cook the breast, put it in a pot with 1 onion, 1 tomato cut in half, 1 clove of garlic, salt and, if you like, a little food colouring. We put it on the heat until the breast is done and, in the meantime, we prepare the sauce.

Chop the rest of the onion and put it in a frying pan with a little oil to fry it.

Chop the pepper and when the onion starts to turn golden brown, add it.

Chop the garlic cloves very small and when the pepper is a little soft, add it to the frying pan too.

Chop the tomato very finely and add it. Stir from time to time until the tomato starts to break down. If we want the sauce to be less chunky, we can mash it a little with a fork. Add a splash of vinegar (about a teaspoon) and stir.

Now add the tomato sauce, stir and leave to cook for about 2 minutes.

Check to see if the breast is done. If it is, take it out and put it on a plate to cool so that we can shred it. Take a ladleful of the stock in which the breast has been cooked and add it to the sauce. Stir and leave it on the heat for 2-3 minutes. Then, set aside. (You can use the broth left from cooking the chicken breast for soups and other recipes that require chicken broth. Strain it and save it in your fridge or freezer!)

Shred the chicken with a fork.

In a pot, put the breast and the sauce and stir until everything is well mixed. Put this on a low heat, stirring from time to time, for about 10 minutes.
