Quesillo (canarian style flan)

This canarian style flan is also known as a quesillo, and it’s the best dessert ever! It’s smooth and incredibly flavourful. Definitively irresistible! I will show you this homemade recipe step by step, and with lots of love. Here in the Canary Islands it’s a typical dessert to have at any restaurant!

So, let’s go to the kitchen!

Ingredients of the quesillo:

  • 6 eggs
  • 500 mL of whole milk
  • 500 mL of condensed milk
  • Vanilla essence
  • Zest of one lemon (preferably a green one)
  • Liquid caramel

Preparation:

Mix the eggs and add a teaspoon of vanilla essence.

Zest the lemon.

Add the whole milk, condensed milk and lemon zest to a bowl. Mix it all with a blender until it’s smooth.

Put this previous mixture in with the eggs and continue mixing it all.

Coat the sides and the base of the mould in liquid caramel. This will be quite helpful when we unmold the quesillo.

Put the mixture we have prepared in the mould and cover it with some aluminium foil.

Preheat the oven at 200ºC (392ºF). Take another mould larger than the mould in which the previous mixture was poured. Fill it with water and place the flan in it.

Put it in the oven and cook it for approximately 30 minutes. Once this time has passed, take away the aluminium foil and use a knife to prick the quesillo. It should come out clean, but if it doesn't, let it cook for a few more minutes. Let it cool down and then take the quesillo out of the mould.

The quesillo can be served with whipped cream or vanilla ice cream. As you can see in the photos, I have added whipped cream and... I love it!
