 I’m sure we are all a huge fan of pizza. I mean, how can you not be? The melted cheese, the fluffy dough… Well this chicken and cheese pizza is definitively a game changer. I assure you that when you make it, you will be drooling because of how tasty it is! Sometimes, less is more. Few ingredients, well combined, result in a pizza that makes you want to eat more and more.

I admit that pizzas are one of my weaknesses. I like to experiment with them and this time my family loved this delicious combination so much that I decided to share it with you all (how could I not?). So, pay attention and follow this step by step homemade recipe to make the best pizza ever!

Ingredients of the chicken and cheese pizza:

For the chicken (topping):

  • 1 chicken breast
  • 3 onions
  • 6-7 tomatoes
  • ½ red pepper
  • 3 garlic cloves
  • 5 tablespoons of tomato sauce (the same one you use for the pizza base)
  • Vinegar
  • Salt
  • Food coloring (optional)

For the pizza base:

  • 500 grams of flour for pizza dough
  • 250 ml of water
  • 2 teaspoons of salt
  • 2 teaspoons of baking powder
  • 40 ml of oil
  • Ketchup or tomato sauce
  • 300 grams of a wedge of cheese
  • A mix of 4 different cheeses
  • Oregano

Preparation of the chicken and cheese pizza:

To cook the breast, put it in a pot with 1 onion, 1 tomato cut in half, 1 clove of garlic, salt and, if you like, a little food colouring. We put it on the heat until the breast is done and, in the meantime, we prepare the sauce.

Chop the rest of the onion and put it in a frying pan with a little oil to fry it. Chop the pepper and when the onion starts to turn golden brown, add it. Chop the garlic cloves very small and when the pepper is a little soft, add it to the frying pan too.

Chop the tomato very finely and add it. Stir from time to time until the tomato starts to break down. If we want the sauce to be less chunky, we can mash it a little with a fork. Add a splash of vinegar (about a teaspoon) and stir. Now add the tomato sauce, stir and leave to cook for about 2 minutes.

Check to see if the breast is done. If it is, take it out and put it on a plate to cool so that we can shred it. Take a ladleful of the stock in which the breast has been cooked and add it to the sauce. Stir and leave it on the heat for 2-3 minutes. Then, set aside.

Shred the chicken with a fork. In a pot, put the breast and the sauce and stir until everything is well mixed. Put this on a low heat, stirring from time to time, for about 10 minutes.

Put the flour, yeast, salt, oil and warm water in a bowl, mix well and leave to stand for about 15 minutes.

Once this time has passed, place the parchment paper on your countertop and roll out the dough with a rolling pin until it almost covers the parchment paper.

Transfer it to the oven tray and preheat the oven to 200º.

Cover the dough with the ketchup or tomato sauce.

Now cover the entire base with the chicken and cover the pizza with the 4 cheese mixture.

Grate the cheese wedge and spread it all over the pizza. Finish it off by sprinkling it with oregano.

We put it in the oven for approximately 20-25 minutes. To know that it is ready, we lift the dough a little and it should be a little golden and.... ready to eat!
