This homemade recipe is finger-licking good! These shredded chicken fajitas with cheese are my weakness. They're so versatile, you can add any filling to them depending on the ingredients you have at hand, and they’re an amazing meal to make when you’re out of ideas.

My son loves to bring them to school but he enjoys them so much that he always asks me for more! Let’s go to the kitchen and I will show you how to make it, step by step.

Ingredients of the shredded chicken fajitas with cheese:

  • 1 packet of fajitas (flour tortillas)
  • 1 piece of cheese (200 grams approx)
  • Mayonnaise
  • 1 chicken breast
  • 3 onions
  • 6 or 7 tomatoes
  • ½ red pepper
  • 3 garlic cloves
  • 5 tablespoons of tomato sauce
  • Vinegar
  • Salt
  • Food colouring (optional)

Preparation:

1. Add the chicken breast to a pot with 1 of the onions, a tomato cut in half, a clove of garlic, salt and the food colouring (remember that this is optional). While we let it cook, we will prepare the sauce.

2. Chop the onion and put it in a frying pan with a little bit of oil to fry it.

3. Then, chop the bell pepper and once the onion starts to have a golden colour, add it to the frying pan too.

4. Chop the garlic cloves into very small pieces. When the vegetables are soft, add the garlic.

5. Chop the tomato very small and add it to the other veggies. Stir from time to time until the tomato begins to break down. If you want your sauce to be less chunky, you can crush the tomato pieces with a fork. Then, add a splash of vinegar, around a teaspoon. Stir the mixture.

6. Add the tomato sauce, stir and leave it to simmer at a very low heat for approximately 2 minutes.

7. Check to see if the chicken breast is completely cooked. If it is, take it out of the pot and put it on a plato to cool so that you can remove the skin. Take a ladle of the broth in which we have cooked the breast and add it to the sauce. Stir it and leave it once again for another 2-3 minutes to simmer. Then, set it aside. You can store the leftover broth to make soups or you can freeze it if you aren’t going to use it immediately.

8. Shred the chicken. You can do this with a fork by pulling the meat until it forms thin strips.

9. Put the shredded chicken in a pot with the sauce and stir it all together until it is well combined and the meat is covered in sauce. Put it over a low heat, stirring occasionally for approximately 10 minutes.

10. Take a flour tortilla and add some mayonnaise on the side (as shown in the picture). Then, put some chicken on top and some grated cheese to taste. Roll the fajita and do the same procedure for the remaining of the chicken mixture. You can heat them a little on a pan so that the cheese melts and the tortilla is a little crispy. It adds an extra touch!
